CMake: Avoid creating empty directories when installing Find*.cmake
Surprisingly, CMake copy/install empty directories when `file` or `install` are used with `FILES_MATCHING PATTERN` argument. In order to avoid this, we can exclude the empty directories using a PATTERN EXCLUDE argument.
